Quick and easy gingerbread

Ingredients

Quantity Ingredient
12 ounces Plain flour
1 teaspoon Baking powder
1 teaspoon Salt
1 teaspoon Grated nutmeg
1 teaspoon Ground cloves
2 teaspoons Ground cinnamon
2 teaspoons Ground ginger
8 ounces White vegetable fat
8 ounces Caster sugar
½ teaspoon Vanilla extract
6 ounces Molasses sugar
2 Beaten eggs

Directions

Preheat oven to 350 degrees

1.Sift together the flour, salt, baking powder and spices.

2.Slowly melt the vegetable fat.

3.Cool until lukewarm and then pour into a food processor.

4.Add the caster sugar, molasses sugar, vanilla and eggs.

5.Blend on medium speed.

6.Thoroughly mix in the dry ingredients.

7.Set aside until completely cooled. (Overnight in the fridge is best, if you have the time. That helps to firm up the dough. Take out of fridge 20-30 minutes before you need to use it) 8.Roll out and cut with cookie cutters. 9.Bake for 15 minutes, until the edges are slightly brown.
