Quick potato salad for one

Ingredients

¼ cup Mayonnaise
1 tablespoon Drained chopped roasted red pepper or pimiento, drained (optional)
1 tablespoon Finely chopped onion
teaspoon Cider vinegar
1 teaspoon Dijon-style mustard
¼ teaspoon Salt Dash pepper
1 Fresh Idaho potato, baked, cubed

Directions

In small bowl combine first seven ingredients; mix well. Add potatoes; toss to coat well. Cover; refrigerate. Makes 1 serving.
