1 cup Arborio rice
cup Chicken broth; heated
1 tablespoon Olive oil
½ cup Quick cooking rice
2 Shallots; chopped
1 teaspoon Basil
1 teaspoon Oregano
1 teaspoon Chives
½ cup Dry white wine
cup Romano cheese
Tomatoes; chop, optional

Directions

Saute shallots in oil; add rice and stir a few minutes. Add warm broth and wine; stir. Add herbs and cheese. Remove from heat and let sit. Can add tomatoes, if using.
