Red-simmered duck with pineapple

Water to cover | ||
1 | can | (#2) sliced pineapple |
2 | tablespoons | Soy sauce |
1 | teaspoon | Salt |
1 | dash | Pepper |
Directions
1. Wipe duck inside and out with a damp cloth. Place breast-side up in a heavy pan. Add cold water to cover and bring to a boil; then simmer, covered, 1 hour.
2. Drain liquid from pineapple and add to duck, along with soy sauce, salt and pepper. Simmer, covered, 30 minutes more. Add pineapple slices during last
10 minutes of cooking.
