Roasted beet salad

1 shallot, -- chopped

Directions

2 bn baby beets, -- roasted

1 lb mesclun or mixed greens

½ c toasted walnuts

3 TB walnut oil

2 ts raspberry vinegar

¼ lb goat cheese

: Salt

: Pepper

Cut off beet tops. In a large serving bowl, toss beet tops with mixed greens and walnuts. Add beets to salad. In a skillet, saute shallot in walnut oil. Deglaze with vinegar. Pour this dressing over salad and toss. Sprinkle top with goat cheese. Season with salt and pepper and serve immediately.
