Robiola bruschetta with white truffle oil

Ingredients

Quantity Ingredient
1 Loaf french bread; sliced on the diagonal
Garlic clove
¼ cup Olive oil
½ cup Robiola cheese*
White truffle oil

Directions

* Available at specialty cheese shops and by mail order from Zabars (800-697-6301)

Preheat broiler.

Grill bread on hot grill pan for 1 to 2 minutes per side. Remove from heat, rub with the garlic clove on one side and lightly brush with olive oil.

Place toasts on a foil lined sheet pan.

Top with the Robiola cheese and place under a preheated broiler until just melted, and bubbly. Remove from the oven, drizzle with truffle oil and serve immediately.
