Sea scallop saute

4 ounces Fresh sea scallops
½ ounce Olive oil
1 ounce Fresh mushrooms sliced
1 teaspoon Chopped parsley
1 ounce White wine
1 tablespoon Tomatoes; peeled and diced
1 tablespoon Red pepper julienne
Chef salt to taste
1 dash Fresh lemon juice

Directions

Heat skillet. Add olive oil, sea scallops and mushrooms and saute. Add chopped parsley, tomatoes, red pepper, and lemon juice. Season with Chef salt and serve.

Yield: 1 single entree
