Shrimp in coconut milk

1 tablespoon Ghee (or oil)
2 Medium onions, thinly sliced
2 Cloves garlic (crushed)
1 teaspoon Finely grated fresh ginger
2 Fresh red or green chilies (

1 teaspoon Ground turmeric
8 Curry leaves
2 cups Coconut milk
1 teaspoon Salt
Lemon juice to taste

Directions

Wash shrimp, shell and de-vein. Heat ghee and fry onions> garlic and ginger until onions are soft but do not let them brown. Add chilies, turmeric, and curry leaves and fry 1 minute longer. Add coconut milk and salt and stir while bringing to simmering point. Simmer uncovered for 10 minutes, then add shrimp and cook 10-15 minutes more. Remove from heat and add lemon juice to taste.
