Siamese fried rice

Ingredients

2 | cups | Cooked white rice |
1 | large | Onion, chopped |
2 | Eggs, beaten | |
⅛ | cup | Pineapple or orange juice |
1 | Green pepper, chopped | |
⅛ | cup | Chopped ham (optional) |
1 | tablespoon | Oil |
Salt and pepper to taste |
Directions
1. In a medium skillet, add half the oil and saute the onion until golden brown. Remove from pan. Add the remaining oil and saute the green pepper until done. Remove the pepper from pan and add to the cooked onions.
2. Add the two beaten eggs to the skillet and scramble into small pieces.
Season with salt and pepper.
3. Saute the chopped ham for a minute (optional), then add the cooked rice, fried onions, green pepper, and juice. Stir over heat for a minute so some of the juice is absorbed. Add scrambled eggs; Mix and heat thoroughly. A teaspoon or so of soy sauce may be added if desired.
