Directions
When you cleaned your fish you should have noticed a dark red section going down the side of the fish. Remember Striper are originally Ocean Fish that became land locked. Then someone decided to stock our Lakes with this fish.
Cut out and discard the Dark Red Section. This section gives a undesireable flavor to this fish. Then I use a oriental marinade for 30 mins. Then smoke or grill. This works for most freshwater game fish.
The other best alternative is cut into small sections, heat Canola oil.
