Smoked trout pilaf

Ingredients

Quantity Ingredient
1 pounds Hot smoked lake trout
1 cup White rice
2 cups Chicken broth
½ cup Butter
1 medium Onion; chopped
1 clove Garlic; minced
2 tablespoons Parsley; chopped
¼ cup Saffron; or tumeric

Directions

Pre-heat over to 400. Melt butter in a heavy casserole or baking dish.

Saute onion, garlic and saffron until transparent. Add rice and stir to coat with butter. Add chicken broth. Bring liquid to a boil. Flake and add fish, stir to mix and cover. Bake in a preheated 400 oven for 30 min.Fluff rice and sprinkle with parsley.
