2 eaches Whole chickens cut into pieces
3 cups Diced celery
2 mediums Diced green peppers
3 cups Diced carrots
1 each Very large diced onion
Chicken bouillon (enough to cover) paprika
Sage
2 pounds Diced mushrooms
pounds Seasoning

DIRECTIONS

Remove the skin and fat from chickens (except from the wings) and place in a large roasting pan. Sprinkle the seasoning on each piece of chicken and cover with diced vegetables (except the mushrooms).

Pour chicken bouillon over the mixture. Liquid should come just to the top of the vegetables. Bake at 375 F. for 2 hours, then stir mushrooms into the mixture and bake another half hour. Serve over rice.
