Spicy sausage and vegetable frittata

Ingredients

8 ounces Hot Italian Sausage; casings removed
1 medium Zucchini; Diced
1 large Red or green bell pepper; Diced
6 larges Eggs
1 cup Shredded mozzarella cheese

Directions

1. Crumble sausage into a 10-inch nonstick skillet. Cook over medium heat 2 to 3 minutes until no pink remains.

2. Add zucchini and bell pepper. Cook about 5 minutes, stirring often until vegetables are tender.

3. Whisk eggs in a large bowl. Stir in cheese. Pour over mixture in skillet and stir gently to distribute eggs evenly.

4. Cook 4 to 6 minutes until set on bottom and sides (eggs will be runny in center).

5. If skillet handle is plastic or wood, wrap in foil to prevent scorching.

Broil fritatta 4 to 6 inches from heat source, 3 minutes or until firm in center.
