Spicy tofu with satay sauce and soba noodles

40 grams Caster sugar; (1 1/2oz)
1 \N Red chilli; deseeded and finely
\N \N ; chopped
200 millilitres Water; (7fl oz)
75 grams Red plums; cut into 5mm ( 1/4
\N \N ; inch) dice (3oz)
1 tablespoon Sesame oil
1 \N 150 gram pac marinated tofu pieces
1 \N 300 gram pac satay sauce
1 \N 300 gram pac soba noodles
2 tablespoons Fish sauce
\N \N Snipped chives and julienne of spring
\N \N ; onions

TO GARNISH

In a medium size pan, heat the caster sugar, chilli and water until the sugar has dissolved.

Add the plums to the pan and cook over a medium heat until you have a thick syrupy mixture, approximately 7 minutes. Remove from the heat.

In a separate pan, heat the sesame oil over a moderate heat and seal the tofu, approximately 2-3 minutes.

Add the plum mixture and cook for a further minute.

Add the satay sauce and bring to the boil. Remove from the heat.

Cook the soba noodles according to pack instructions, add to the satay and season with fish sauce.

Notes Serve in a warm bowl garnished with snipped chives and spring onions.
