St. james winery gourmet potato salad

12 | smalls | (To 14) New Potatoes, About 1 1/2 Lbs) -- unpeeled |
3 | tablespoons | St. James Country White Wine |
¼ | cup | Olive Oil |
2 | tablespoons | Wine Vinegar |
¼ | teaspoon | Dried Whole Tarragon |
¼ | teaspoon | Salt |
¼ | teaspoon | White Pepper |
1 | tablespoon | (To 2) Dijon Mustard |
¼ | cup | Green Onions -- thinly sliced |
¼ | cup | Fresh Parsley -- minced |
Directions
Wash potatoes and cook in boiling water until tender. Cut into ¼-inch slices, add wine and let stand for 10 mins. Combine olive oil and next five ingredients and stir well. Pour over potato mixture. Add green onions and parsley and stir gently. Makes 8 servings.
