St. james winery gourmet potato salad

Ingredients

12 smalls (To 14) New Potatoes, About 1 1/2 Lbs) -- unpeeled
3 tablespoons St. James Country White Wine
¼ cup Olive Oil
2 tablespoons Wine Vinegar
¼ teaspoon Dried Whole Tarragon
¼ teaspoon Salt
¼ teaspoon White Pepper
1 tablespoon (To 2) Dijon Mustard
¼ cup Green Onions -- thinly sliced
¼ cup Fresh Parsley -- minced

Directions

Wash potatoes and cook in boiling water until tender. Cut into ¼-inch slices, add wine and let stand for 10 mins. Combine olive oil and next five ingredients and stir well. Pour over potato mixture. Add green onions and parsley and stir gently. Makes 8 servings.
