Steeped chicken with basil dressing

1 | slice | Ginger root -- quarter size |
1 | cup | Basil leaves |
2 | Cloves garlic | |
¼ | cup | White wine vinegar |

3 | Tomatoes -- thinly sliced | |
Basil leaves | ||
½ | cup | Olive oil |
2 | tablespoons | Parmesan cheese -- grated |
⅛ | teaspoon | Pepper |
Directions
BASIL DRESSING
Rinse chicken and place in a 4 qt pan with a tight fitting lid; pour in enough water to cover chicken by 1 to 2". Lift out chicken; add lemon, onion, ginger and parsley to water. Cover pan and bring water to a boil over high heat. Remove from heat and quickly immerse chicken in water. Cover pan tightly and let stand for 18 minutes; do not uncover until this time is up. Check for doneness. Drain chicken; immerse in ice water until cool, then drain again. Gently peel off skin and remove meat from bones, keeping chicken pieces whole. Discard skin and bones. Prepare basil dressing in food processor. Place lettuce at both ends of a platter; arrange tomato slices over lettuce. Cut chicken across the grain into ½" thick slices; arrange in center of platter. Drizzle chicken and tomatoes with a little of the basil dressing. Garnish with basil leaves. Offer remaining dressing on the side.
