Stewed okra

Ingredients

Quantity Ingredient
1 pack (20-oz) frozen chopped okra
1 Green or red pepper, diced
1 Onion, diced
1 can (7-oz) diced green chiles
1 can (28-oz) tomatoes
3 smalls Potatoes, diced
2 pints Water (or enough water to bring the juice from the canned tomatoes to 2 pints)

Directions

Soak the okra in water for 1 hour. Drain. Combine all ingredients and bring to a boil. Turn down the heat, clamp on the lid, and cook for 30 minutes or longer until sauce is thick.

Serves 6 to 8.
