Stuffed chayote squash w/mushrooms & cheese

Ingredients

Quantity Ingredient
1 pounds Chayotes
½ cup Mushrooms, Sliced
½ cup Mild Cheddar, Shreds
1 dash Lemon Juice
Salt, Pepper

Directions

Cut the chayotes in half and remove the seed. Steam the chayotes until tender (45 to 60 minutes). Saute the mushrooms in butter until lightly browned. Place the chayotes on a serving platter. Stuff with mushrooms. Sprinkle with shredded mild cheddar. Serve warm.
