Sweet and spicy beans and rice

2 | cups | Uncooked instant white rice* |
1 | tablespoon | Oil |
¼ | cup | Red onion; chopped |
2 | Jars or cans B&M® Original Brick Oven Baked Beans; (16-18 oz. each) | |
1 | can | Old El Paso® Chopped Green Chiles |
1 | pack | Old El Paso® Taco Seasoning Mix; (1.25 oz.) |
½ | cup | Sour cream; if desired |
2 | ounces | Shredded cheddar cheese (1/2 cup); if desired |
Directions
*Cooked according to package directions.
1. While rice is cooking, heat oil in medium saucepan over medium-high heat until hot. Add onion; cook and stir 1 minute. Reduce heat to medium. Add beans, chiles and taco seasoning mix; mix well. Cook just until mixture comes to a boil, stirring occasionally.
2. Add cooked rice; mix well. Spoon into serving bowl; serve with sour cream and cheese. Makes 8 (¾-cup) servings.
