Sweet and spicy beans and rice

Ingredients

2 cups Uncooked instant white rice*
1 tablespoon Oil
¼ cup Red onion; chopped
2 Jars or cans B&M® Original Brick Oven Baked Beans; (16-18 oz. each)
1 can Old El Paso® Chopped Green Chiles
1 pack Old El Paso® Taco Seasoning Mix; (1.25 oz.)
½ cup Sour cream; if desired
2 ounces Shredded cheddar cheese (1/2 cup); if desired

Directions

*Cooked according to package directions.

1. While rice is cooking, heat oil in medium saucepan over medium-high heat until hot. Add onion; cook and stir 1 minute. Reduce heat to medium. Add beans, chiles and taco seasoning mix; mix well. Cook just until mixture comes to a boil, stirring occasionally.

2. Add cooked rice; mix well. Spoon into serving bowl; serve with sour cream and cheese. Makes 8 (¾-cup) servings.
