Thai steamed salmon

2 | Green chillies | |
3 | tablespoons | Fresh lime juice |
1 | tablespoon | Caster sugar |
1 | teaspoon | Fresh ginger; chopped |
1 | tablespoon | Nam pla; (fish stock) |
4 | 175 g; (6oz) salmon fillets |
Directions
In a food processor blend together the coriander leaves and stalks of mint leaves, salt, garlic and chillies to make a paste. Add the lime juice, caster sugar, ginger and fish sauce and process until smooth.
Spoon the sauce into a bowl and combine with the salmon. Marinate for 20 minutes.
Boil the water in the bottom half of the steamer. Place the bowl with the marinated salmon in the top half. Steam for 6 to 8 minutes. Serve immediately.
