Thick onion soup

6 | larges | Onions, thinly sliced |
¼ | cup | Flour |
1 | teaspoon | Paprika |
1 | teaspoon | Salt |
2 | cups | Water |
4 | larges | Potatoes, peeled and sliced |
2 | cups | Reduced-fat soymilk, or plain rice milk |
Directions
In a large, heavy pot, steam-fry until golden and soft the onions.
Stir in flour, paprika and salt.
Blend well and add water.
Cover and simmer for 30 minutes. Meanwhile, boil in enough water to almost cover until tender the potatoes.
Mash the potatoes coarsely in whatever cooking water is left. Add the potatoes to the onion mixture with the soymilk (or rice milk) Add salt and pepper to taste. Heat gently and sprinkle each serving with paprika and/or chopped parsley.
Per serving: 178 calories, 4 grams protein, 38 grams carbohydrates, 1 gram fat.
