Ingredients

1 each Eggplant; small/pared
1 each Zucchini; small, diced
1 each Onion; halved/thinly sliced
1 each Garlic clove; minced
2 cups Tomatoes; broken/w juice
1 x Salt & pepper to taste
teaspoon Oregano
3 cups Turkey; roasted/cubed

Directions

Spray skillet with cooking spray. Combine all ingredients except turkey. Cover and simmer 10 minutes, stirring frequently, until vegetables are tender-crisp. Stir in cubed turkey, Cook and stir uncovered until nearly all the liquid is evaporated and the turkey cubes are white (about 3 to 4 minutes). Calories 120 per serving.
