Upside down mulled pear tart

6 Pears; peeled and halved
Puff pastry
1 Cinnamon stick
1 Vanilla pod
250 grams Sugar
4 Star anise
500 millilitres Red wine
250 millilitres Water
60 grams Butter
125 grams Sugar

Directions

MULLED WINE

CARAMEL

Bring all the ingredients for the mulled wine together and boil. Add the pears, cover with greaseproof paper and simmer until cooked.

In a cast iron pan melt the butter, add the sugar and caramelise.

Add the pears, cover with puff pastry and bake in the oven until the pastry is cooked.

Allow to cool slightly, then turn out on to a plate.
