Vanilla poached plums

Ingredients

Quantity Ingredient
1 large Vanilla bean
¼ cup Sugar OR
3 Sacks vanilla sugar
2 cups Unpeeled, pitted, sliced plums; (about 1#)
teaspoon Lemon juice
2 teaspoons Margarine

Directions

Cut vanilla bean in half lengthwise, and scrape seeds into a small bowl; discard bean. Add sugar and stir well.

Place plums in a 1-quart baking dish, add sugar mixture and lemon juice, tossing gently to coat. Dot with margarine; cover and bake at 400F for 20 min or until plums are tender, stirring once.

Yield: 4 servings @ 112 calories each.
