Vegetable rice

¼ | cup | Onion;chopped |
3 | tablespoons | Butter |
1½ | cup | Mushrooms;sliced |
2 | cups | Broccoli;chopped |
1 | cup | Tomato;diced |
1 | cup | Rice;uncooked |
2 | cups | Water |
2 | Bouillon;chicken;cubes | |
½ | teaspoon | Salt |
½ | teaspoon | Oregano |
¼ | cup | Parmesan Cheese;grated |
Directions
Cook onions in butter until golden. Add mushrooms, broccoli and tomatoes and cook about 4 minutes.
Add water and bouillon cubes and bring to a boil. Stir in rice, salt and oregano.
Cover and cook over low heat, 20 minutes or until water is absorbed. Stir in Parmesan cheese. Serve hot or cold.
