Vegetable rice

¼ cup Onion;chopped
3 tablespoons Butter
cup Mushrooms;sliced
2 cups Broccoli;chopped
1 cup Tomato;diced
1 cup Rice;uncooked
2 cups Water
2 Bouillon;chicken;cubes
½ teaspoon Salt
½ teaspoon Oregano
¼ cup Parmesan Cheese;grated

Directions

Cook onions in butter until golden. Add mushrooms, broccoli and tomatoes and cook about 4 minutes.

Add water and bouillon cubes and bring to a boil. Stir in rice, salt and oregano.

Cover and cook over low heat, 20 minutes or until water is absorbed. Stir in Parmesan cheese. Serve hot or cold.
