Veggie crab cakes

Ingredients

Quantity Ingredient
2 cups Zucchini, grated (no need to peel)
1 cup Seasoned bread crumbs
1 tablespoon Old Bay seasoning
Egg substitute or egg whites to equal 1 egg
1 tablespoon Fat-free mayo
1 small Grated onion

Directions

Put grated zucchini on a towel and squeeze out all of the water. Mix all ingredients together and form into patties with your hands. Cook in a non-stick skillet ontil golden brown on both sides and done in the middle.

We had these with salsa, but you could make any kind of sauce, such as yogurt-cucumber, and they would be just as good.
