Vindaloo beef curry

Ingredients

10 | ounces | Boneless beef round |
2 | teaspoons | Light margarine |
½ | cup | Onion; chopped |
1 | Garlic clove; minced | |
1½ | teaspoon | White vinegar |
¼ | teaspoon | Ground turmeric |
⅛ | teaspoon | Ea: cumin; ground ginger |
⅛ | teaspoon | Ea: dry mustard; red pepper |
⅛ | teaspoon | Ea: black pepper; salt |
¾ | cup | Water |
2 | tablespoons | Lemon juice |
1 | cup | Cooked white rice; (hot) |
Directions
On rack in broiling pan, broil steak, turning once, until rare; cut into 1-inch cubes. In 1 qt saucepan, heat margarine until bubbly; add onion & garlic and saute until onion is translucent. Add vinegar & seasonings and stir to combine; add steak and cook, stirring frequently, for 3 minutes.
Stir in water, cover pan, and let simmer, stirring occasionally, until meat is tender, about 1 hr. Stir in lemon juice and serve over rice.
