Asparagus potato quiche

3 | tablespoons | Butter -=OR=- |
1 | small | Onion; diced |
1 | clove | Garlic; crushed |
3 | Eggs; | |
3 | tablespoons | Diced ham; |
3 | tablespoons | Cheddar cheese; grated |
1 | tablespoon | Green onions; chopped |
1 | 6-1/2 oz pasty crust; prepared |
Directions
Melt butter or margarine, add onion and garlic and fry until onions are transparent. Add diced asparagus and fry 2 more minutes. Add grated potatoes, whisk in eggs, ham, cheese and chives. Add salt and pepper if desired. Pour into prepared pastry crust and bake 350 degrees for 1 hour, garnish with diced tomatoes. Served 6.
