Ava j. cox's hot water cornbread

Ingredients

Quantity Ingredient
4 cups Water
cup Cornmeal, Yellow Or White
½ teaspoon (To 1) Salt
3 tablespoons Bacon Grease, Shortening
Or Vegetable Oil, melted

Directions

* Preheat oven to 400 F.

1. Bring the water to a rolling boil. Sift in the cornmeal and salt, stirring constantly. Remove from heat. If any lumps form, beat them well with a wooden spoon or whisk to get rid of them.

2. Spread an 8-inch-square baking pan with 1 Tbs of fat, coating the sides, also. Spread the batter in the dish, smoothing it out. Cover it with the remaining fat.

3. Bake cornbread for 1 hour, or until brown and crisp around edges.

Cut into serving pieces.
