4 | cups | Water |
1½ | cup | Cornmeal, Yellow Or White |
½ | teaspoon | (To 1) Salt |
3 | tablespoons | Bacon Grease, Shortening |
Or Vegetable Oil, melted |
Directions
* Preheat oven to 400 F.
1. Bring the water to a rolling boil. Sift in the cornmeal and salt, stirring constantly. Remove from heat. If any lumps form, beat them well with a wooden spoon or whisk to get rid of them.
2. Spread an 8-inch-square baking pan with 1 Tbs of fat, coating the sides, also. Spread the batter in the dish, smoothing it out. Cover it with the remaining fat.
3. Bake cornbread for 1 hour, or until brown and crisp around edges.
Cut into serving pieces.
