Avgolemono sauce

Ingredients

Quantity Ingredient
3 Eggs
¼ cup Lemon juice
1 cup Warm chicken stock or bouillon

Directions

Beat eggs in top of a double boiler. Gradually blend in juice and stock.

Cook over hot water until thickened. Beat until foamy. Serve hot over vegetables. Calories: 9 per Tablespoon. Yield: 2 cups.
