Avocado stuffed with chicken salad

Ingredients

1.00 cup diced cooked chicken breast
2.00 tablespoon mayonnaise
1.00 teaspoon chopped orange zest
1.00 tablespoon chopped shallots
1.00 tablespoon chopped fresh red pepper
1.00 teaspoon chopped fresh chives
1 salt; to taste
1 freshly ground black pepper; to taste
1.00 ripe avocado; halved, pit removed,
1 and peeled
4.00 radicchio leaves

Directions

In a bowl combine; chicken, mayonnaise, orange zest, shallots, red pepper, and chives. Season to taste with salt and pepper. Divide the salad between the two avocado halves, filling the cavity. To serve, place 2 radicchio leaves on each serving plate and top with an avocado half. This recipe yields 2 servings.
