Basic pasta filling

Ingredients

Quantity Ingredient
2 pounds Ricotta cheese
2 cups Mozzarella cheese; grated
1 cup Parmasean cheese; grated
2 Large egg yolks
tablespoon Fresh garlic; minced
1 tablespoon Dry oregano
1 tablespoon Dry basil
To Taste kosher salt
To Taste black pepper

Directions

1. Combine all ingredients.

VARIATIONS:

***add 20 ounces of frozen spinach, well wrung out.

***add 1 cup finely chopped proscuitto ***add ½ cup chopped, cooked pancetta or hot ham *** substitute different herbs
