Bean burrito casserole

Ingredients

2 cups Tomato sauce
3 cups ;water
¼ teaspoon Garlic powder
5 cups Pinto beans; mashed
1 cup Green onions; cooked
½ teaspoon Onion powder
3 tablespoons Chili powder
4 tablespoons Cornstarch or arrowroot
½ cup Black olives; chopped
12 Whole wheat tortillas

Directions

CASSEROLE

Sauce: Combine all sauce ingredients in a saucepan.

Cook, stirring constantly, until mixture boils and thickens, about 7 minutes.

Casserole: Place casserole ingredients in separate bowls.

To assemble: Spread 1 cup sasuce in the bottom of a coverfed casserole dish. Fill each tortilla with a mixture of the beans, green onions and olives. Roll up and place seam side down in the casserole dish. Pour remaining sauce over the rolled-up tortillas. Cover and bake at 350 degrees for 30 minutes.

Variation: Substitute 2 cups of rice for 2 cups of beans.
