½ | cup | Onion, chopped |
½ | cup | Celery, leafy, chopped |
1 | each | Meaty soup bone |
¼ | cup | Parsley, chopped |
¼ | teaspoon | Salt |
2 | tablespoons | Butter |
½ | cup | Okra, sliced |
2 | cups | Tomatoes, canned |
Directions
In a large pot, brown soup meat in fat. Add 3 qts water, celery, parsley, onion, salt and paprika. Simmer until meat falls off bone, 2-3 hrs. Strain, cool and skim the broth. In a skillet, saute onion, okra and celery in butter. In the soup pot, combine, stock, meat, sauteed vegetables and tomatoes. Simmer a few min for flavors to blend. Submitted By BOBBI ZEE On 08-23-95
