Easy gumbo

Ingredients

Quantity Ingredient
1 tablespoon Vegetable oil
1 medium Onion -- chopped
½ pounds Shrimp -- peeled & deveined
24 Pieces reserved sausage from Meatballs & Sausage
1 cup Frozen okra -- sliced
½ cup Crushed tomatoes
½ cup Reserved Red Hot Red Pepper Sauce
Salt and pepper
3 cups Rice -- cooked

Directions

Heat the oil in a large nonstick skillet over medium high heat, add the onion and cook until lightly browned, stirring constantly, about 3 minutes. Add the shrimp and toss for 30 seconds. Add the sausage, okra, tomatoes and pepper sauce. Bring to a boil, reduce the heat, season with salt and pepper, and simmer for 1 minute. Serve over hot rice.
