Bev's bbq seitan

Ingredients

Quantity Ingredient
1 Box Arrowhead Mills Seitan (or any other that might be more convenient for you)
Water
Liquid smoke
2 quarts Water; about
½ cup Liquid smoke; additional
1 Bottle (32-oz) ketchup (any brand will do)
½ cup Dark Karo syrup
Liquid smoke to taste; usually from about 1/4 to 1/3 cup

Date: Tue, 28 May 1996 11:23:12 -0500 From: Beverly Kurtin <bevku@...> Use an entire box of Arrowhead Mills seitan (or any other that might be more convenient for you). Start by mixing the seitan with 50% water and 50% liquid smoke. Follow the direction on the box for kneading the seitan.

IGNORE the usual broth recipe. Pour in about two quarts of water into which you have added another half cup of liquid smoke. Bring to a boil, then add the seitan. Reduce to a rolling simmer and cover for five minutes.

Remove the cover and continue cooking in a gently rolling simmer. After two hours, turn the seitan over and pour in more water and some more liquid smoke. Cook for two more hours and it's done. Store the seitan, as usual, in the broth, keeping it totaly submerged at all times.

When you're ready, THINLY slice it and heat on foil over a barbecue for just a few moments, add BBQ sauce and anyone who can tell it from m**t has better taste buds than I do.
