Blueberry bran muffins

Ingredients

Quantity Ingredient
1 cup All bran cereal
½ cup Skim milk
cup Flour
teaspoon Baking powder
½ teaspoon Salt
½ teaspoon Cinnamon
1 cup Unsweetened apple sauce
cup Molasses
cup Sugar
2 tablespoons Vegetable oil
1 each Egg
1 each Egg white
½ cup Fresh or frozen blueberries
Not thawed

Directions

In large bowl combine bran cereal, and skim milk. Let stand 5 minutes. In medium bowl stir together flour, baking powder, salt, and cinnamon; set aside. Add apple sauce, molasses, sugar, oil, egg, and egg white to bran cereal, stir until well combined. Add dry ingredients and stir until just moistened. Fold in blueberries. Pour into 12 muffin cups sprayed with non stick cooking spray. Bake at 400 for 20 to 25 minutes. Remove from pan and cool completely. From Motts recipe card Submitted By ELEANOR MURRAY On 10-07-95
