Blueberry cymbelline pie

Ingredients

Quantity Ingredient
2 larges Ripe bananas
cup Ground almonds
¼ teaspoon Vanilla
4 cups Blueberries
¾ cup Pitted dates, soaked 1 hour in 1/4 c water
2 teaspoons Ground psyllium husks, optional
2 larges Bananas, peeled

Directions

CRUST

FILLING

CRUST: Mash bananas until creamy. Mix in ground almonds & vanilla.

Smooth the crust into the bottom & the sides of a 9" pie plate.

FILLING: Blend 1 c blueberries with the dates, soak water, psyllium (if using) & bananas, until creamy. Stir in the remaining blueberries. Pour the filling into the crust so that the blueberries pile high. Refirgerate for several hours. This dessert is best eaten the same day.
