Blueberry cymbelline pie

Ingredients

2 | larges | Ripe bananas |
1¼ | cup | Ground almonds |
¼ | teaspoon | Vanilla |
4 | cups | Blueberries |
¾ | cup | Pitted dates, soaked 1 hour in 1/4 c water |
2 | teaspoons | Ground psyllium husks, optional |
2 | larges | Bananas, peeled |
Directions
CRUST
FILLING
CRUST: Mash bananas until creamy. Mix in ground almonds & vanilla.
Smooth the crust into the bottom & the sides of a 9" pie plate.
FILLING: Blend 1 c blueberries with the dates, soak water, psyllium (if using) & bananas, until creamy. Stir in the remaining blueberries. Pour the filling into the crust so that the blueberries pile high. Refirgerate for several hours. This dessert is best eaten the same day.
