Ingredients

Quantity Ingredient
3 cups Mashed potatoes
1 tablespoon Oil
1 medium Onion, chopped
½ cup Tofu, crumbled
¼ cup Parsley, minced
½ teaspoon Salt
¼ teaspoon Black pepper
2 tablespoons Oil

Directions

Saute the 1 T. oil and 1 med chopped onion.

Mix the tofu, parsley, salt and pepper into the potatoes.

Shape into 12 patties ½" thick and brown about 4 minutes each side in 2 T oil.
