Ingredients

Quantity Ingredient
1 quart Chicken stock/broth
2 cups Chicken, precooked & chopped coarsely
cup Cooked rice
16 ounces Can of garbanzo beans, drained
2 xes Chipotles en adobado, rinsed, seeded & chopped
1 x Pinch of oregano
2 cups Monterey Jack cheese, cubed 1/2\"x1/2\"
2 xes Avocados, peeled & cubed

Directions

YIELDS: 6 SERVES

Combine stock, chicken, rice, beans, and peppers in a large saucepan over medium heat. Bring to a simmer, stirring occasionally. Add oregano. Equally divide cheese and avocado among the bowls and ladle small amounts of soup into each bowl. There should be more solids than soup in each. Serve immediately.
