Broccoli-beef stir-fry

¾ pounds Tender beef steak, cut into
Thin, narrow slices
1 tablespoon Cornstarch
1 tablespoon Soy Sauce
1 tablespoon Dry sherry
1 tablespoon Fresh ginger root, minced
1 Clove Garlic, crushed
1 pounds Broccoli
¼ cup Soy Sauce
2 tablespoons Cornstarch
1 cup Water
4 tablespoons Vegetable oil, divided
1 Onion, cut into chunks

Directions

In a bowl, combine the 1 tablespoon of cornstarch, 1 tablespoon of soy sauce, sherry, ginger root, and garlic. Stir in the beef. Let stand for 15 minutes.

Remove the flowerets from the broccoli and cut them in half lengthwise. Peel the stalks and cut crosswise into ⅛-inch slices.

In a small bowl or measuring cup, blend the ¼ cup of soy sauce with the 2 tablespoons of cornstarch and water. Set aside.

In a hot wok or large skillet over high heat, heat 2 tablespoons of the vegetable oil. Add the beef and stir-fry for 1 minute. Remove the beef.

Using the same pan, heat the remaining 2 tablespoons of oil. Add the broccoli and onion and stir-fry for for 4 minutes. Add the beef and reserved soy sauce mixture. Cook, stirring, until the mixture boils and thickens. Serve immediately.

Makes 4 servings.
