Canada war cake

1 Servings

Ingredients

Quantity Ingredient
2 cups Brown or white sugar
2 cups Water
cup Lard or shortening
1 cup Raisins
¼ teaspoon Salt
½ teaspoon Nutmeg
2 teaspoons Cinnamon
1 teaspoon Ground cloves
2 teaspoons Baking soda; mixed with
cup Cold coffee or water
4 cups All-purpose flour; sifted with
1 teaspoon Baking powder
1 cup Chopped nuts
Whole or half nuts; optional

Directions

Boil sugar, water, lard, raisins, salt and spices 5 minutes. Let cool, then add baking soda and flour mixtures. Mix thoroughly (batter should be quite stiff). Add chopped nuts. Pour into greased and floured rectangular or square pans and decorate with nuts. Bake in preheated 350°F oven 30 to 35 minutes or until a knife inserted in center comes out clean.

I usually omit the half or whole nuts and just lightly dust the top with powdered sugar.
