Caramelized-onion custards

1 | cup | Chopped caramelized onions; cooled, about 3 cups uncooked |
⅛ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
⅛ | teaspoon | Ground nutmeg |
2 | larges | Eggs |
2 | larges | Egg whites |
12 | ounces | Evaporated skim milk |

Directions
1. Preheat oven to 325°F.
2. Combine all ingredients except cooking spray in a large bowl. Spoon onion mixture into 6 (6-ounce) custard cups coated with cooking spray.
Place the custard cups in a 13 x 9-inch baking pan; add hot water to pan to a depth of 1 inch. Bake at 325°F for 1 hour or until a knife inserted in center comes out clean.
Yield: 6 servings.
