Carolina farmer's brunswick stew

Ingredients

1 | medium | Onion; chopped |
1 | tablespoon | Fat/oil |
2 | cups | Cooked tomatoes |
2 | cups | Cooked lima beans |
2 | cups | Cooked corn |
2 | cups | Chicken or turkey; chopped |
Salt and pepper to taste |
Directions
Cook onion in fat in large pan until tender. Combine all vegetables and bring to simmer. Drain vegetables, saving liquid (add water to make 2 cups). Combine vegetables with onions, add meats, season to taste, and bring just to boil.
This makes a thinner (and in my opinon, less flavorful) stew but it's a fairly good place to start.
