Carrot bulgar pilaf

2 Carrots; peeled and grated
2 tablespoons Butter, marg. or veg. oil
1 cup Bulgar wheat
1 can Low-sodium chicken broth
¼ teaspoon Pepper
¼ cup Cilantro or parsley, chopped

Directions

In a medium pot on med high heat melt butter and add carrots and bulgar. Cook 2-3 min stirring constantly. Add broth and pepper, cover and simmer 15-20 min until broth absorbed and bulgar is tender.
