Ingredients

Quantity Ingredient
Makes 3 to 4 quarts
30 eaches Tomatoes, medium-ripe
12 eaches Tart apples, cored
5 eaches Green peppers
10 eaches Onions
1 quart Cider vinegar
3 cups Sugar
5 tablespoons Salt
1 teaspoon Cinnamon
½ teaspoon Cayenne pepper

Directions

Chop tomatoes, apples, peppers and onions. Mix together and add vinegar and sugar. Put into a large pot and simmer until soft. Press through a coarse sieve or colander. Blend in salt, cinnamon and cayenne and return to low heat. Simmer until ingredients thicken, about 1 hour. Makes 3 to 4 quarts. Source: The Farmers' Almanac Cook Book, Pocket Books, Inc., 1965.
