Cheese-baked macaroni with broccoli

Ingredients

Quantity Ingredient
1 bunch Fresh broccoli
3 tablespoons Butter
1 tablespoon Olive oil
½ cup Grated Parmesan cheese
1 pounds Ziti, cooked and drained
1 pounds Mozzarella, diced
2 eaches Eggs
Preheat oven to 375 degrees F.

Directions

Cook broccoli in a small amount of boiling salted water. Drain, cool and cut into small spears. Saute broccoli in butter and olive oil in a medium size skillet until well saturated, stirring constantly.

Sprinkle the bottom of a 3-quart buttered casserole with Parmesan cheese; cover with a layer of macaroni, then a layer of broccoli.

Top with a layer of mozzarella. Sprinkle with Parmesan cheese.

Continue alternating layers, finishing with a layer of macaroni.

Break eggs into a bowl, add 2 Tbsp. grated Parmesan cheese, and beat well. Pour over macaroni, dot with butter, and bake, uncovered, for 20 minutes or until macaroni has a golden crust. Yield: Serves 4 From: Asbury Park Press 9/28/94 Father Orsini's Italian Kitchen, St.
