Cherry nut cake - my favorite!

Ingredients

Quantity Ingredient
cup Flour
1⅓ cup Sugar
3 teaspoons Baking powder
1 teaspoon Salt
½ cup Vegetable shortening
¼ cup Maraschino cherry juice
16 Maraschino cherries
½ cup Milk
4 larges Egg whites
½ cup Chopped walnuts

Directions

Preheat oven to 350°F. Sift together the flour, sugar, baking powder, and salt. Add the vegetable shortening, cherry juice, cherries and the milk and beat for 2 minutes. Add ½-⅔ cups(4 large) unbeaten egg whites and beat 2 minutes more. Then fold in1/2 c. of chopped nuts. Pour into two greased and floured round cake layer pans and bake for 30-35 minutes. Frost with pink Seven Minute Frosting (it's recipe is in this file).

NOTES : MUST use 7-Minute Frosting on this cake and color it pink.
