Cherry preserves - country living

3 | 12-oz packages frozen, unsweetened, pitted dark cherries | |
½ | cup | Sugar |
1½ | tablespoon | Lemon juice |
Directions
1. In large microwave-safe bowl, combine cherries and sugar. Cover loosely and microwave on high (100 percent) 12 minutes.
2. Stir mixture to dissolve sugar. Microwave on high (100 percent), uncovered, 45 minutes.
3. In food processor or blender, with chopping blade, process cherry mixture with lemon juice until coarsely pureed. Check mixture for doneness (see Testing for Doneness).
4. Spoon cherry preserves into jars and refrigerate or cool to room temperature and spoon into plastic bags and freeze.
