Chicken salad for company

Ingredients

3 | Whole chicken breasts poached and cut in bite-size pieces | |
1 | large | Sweet red pepper cut in julienne strips |
2 | larges | Heads broccoli cut in florets |
12 | slices | Thick-cut bacon cooked crisp and crumbled |
¾ | cup | Sour cream |
¾ | cup | Mayonnaise |
4½ | tablespoon | Dijon mustard |
4½ | tablespoon | Raspberry vinegar |
2 | tablespoons | Dill, finely chopped |
Directions
Combine chicken with red pepper in a large bowl.
In a vegetable steamer, steam the broccoli for 2-3 minutes, or until it just starts to get tender. Add it to the chicken and mix it gently. Mix in the crumbled bacon.
Whisk together the sour cream, mayonnaise, Dijon mustard, raspberry vinegar and dill. Pour the dressing over the chicken and vegetables and mix well. Chill salad for at least 2 hours before serving.
